I might get a little flamed for this but here goes. We had a bag of stick candy on display for over 15 years, closely monitored, and nothing happened. No bugs, no issues at all. The trick was MANY coats of Krylon 51313 satin clear, applied until we were absolutely certain the candy was completely sealed. Make sure everything is well cured and off-gassed before installation, and as mentioned, monitor, monitor, monitor!
Of course if you can get good replicas made from inert materials, that's much better. If there is something that's hard to duplicate, clear coat a real one. Just do it carefully.

Even though these are not transparent the way many candies were (and are), that is well within our capabilities. We would use UV-resistant, water-clear resin, in case sunlight can get to the general store exhibit.
