Adding to the excellent advice everyone has already posted, there is a Costume Professionals group on LinkedIn that you can apply to join. Members are a mix of theatre, collector, and museum people and it's a good forum for soliciting answers to practical questions. It might be a good resource for you as you embark on your exhibition.
There is an ICOM Costume Committee meeting in Toronto in early September, and there will be a short committee meeting during the ICOM Triennial in Milan next July as well. Here is a link to the Costume Committee webpage:

And finally, although I don't know of any other museums in Poland with costume (though there's a great textile collection, tapestry especially, in Lodz), there are many museums in Europe that have costume collections that might be able to offer more local advice on things like mannequin sources and other matters. As noted The Costume Society of America and the ICOM Committee are good sources for discussion. Many institutions have Curators focused on this subject matter.
The Clothing and Textiles Collection of the Museum at Texas Tech University holds over 26,000 objects of garments, accessories, household linens, quilts, coverlets and dolls. We welcome any research inquiries and continue to build the collection so that it is a source for design and history research. My work focuses on fashion history, fashion exhibitions, curating fashion exhibitions, but also exhibitions and research on the other aspects of the extensive collection.
